Does the theme display seo-friendly URL's like http://www.store.com/category/product.html if Mod-Rewrite and SEO is enabled?

(IE, permalink structure would be '/%category%/%postname%/')

I noticed the demo is using '?p=23' urls.

Yes. No theme is every going to have an effect on if permalinks work or not. The demo is only set up like that because it is my testing ground for all my themes and I never bothered with setting up permalinks for it.
