The first files you mentioned are pages and can be found under the "page" menu tab in the admin area.
featured categories come from the Market Theme menu tab under "category images".
New products just lists the most recent 3 products entered. (In a product post, you can alter the date if you like.)
Also, you can alter the number of new products listed in the MArket Theme settings area.

Can you please be more specific I can't find "pages" anywhere.
In the Wordpress administration area, on the left menu bar there is a tab named "Pages".
If you're looking in the online demo (http://www.markettheme.com/demo), then you'll find a link to the admin area in the red bar at the top of the page.
